When you feel that you have over indulged on bread, pasta and rice and can hear your body calling for something lighter, here is your answer!
I will often use this as a base for a delicious Bolognese sauce or stir through some yummy pesto and serve with fish or chicken.
I do recommend investing in a spiraliser as you’ll get much better results than with a peeler and also have a lot more fun.
Ingredients (serves 2)
2 medium zucchinis
½ teaspoon extra virgin olive oil
Sea salt
Method
Twist each zucchini through a spiraliser to make noodles.
Heat a pan on medium heat, place a few drops of olive oil and using a paper towel wipe the pan so that it is evenly but very lightly oiled. Add in the noodles, a pinch or two of salt and toss regularly for about one minute. Don’t overcook as you want crunchy (not soggy) noodles.
