Wild salmon delivers valuable protein, good essential fats and of course calcium from those edible bones.
You can buy almond meal or making a chunkier version yourself by whizzing whole almonds in the food processor.
Ghee is clarified butter. It is essentially pure butter fat without the milk solids. It is a very stable fat, making it ideal for pan-frying.
Serve with a salad or steamed veggies, together with avocado and roasted beetroot on the side.
I like roasting the sweet potato ahead of time, meaning that when I am ready to cook, I can jump right in and get the patties done!
Ingredients (12 patties, serves 6)
- 600g sweet potato (about 3 small sweet potatoes)
- 600g tinned wild Alaskan salmon
- 1 teaspoon extra virgin olive oil for sautéing
- 1 brown onion, diced
- ½ cup almond meal
- 1 bunch dill, leaves only, finely chopped
- 2 teaspoons salted capers
- 1 organic egg, beaten
- ½ teaspoon fine sea salt
- Cracked pepper to taste
- 1 teaspoon ghee for pan frying (optional)
Method
- Preheat oven to 180°C.
- Place the sweet potato on a baking tray lined with baking paper and bake for 45 minutes, or until soft.
- Drain the salmon very well and place in a mixing bowl. Use some paper towel to soak up any excess liquid.
- Heat olive oil in a pan, add the onion and sauté on low heat until translucent (about 5 minutes). Add the onion to the bowl.
- Add in the almond meal, dill, capers, egg, salt and some pepper.
- Once the sweet potato is ready, remove from the oven, slice lengthways and allow it to cool a little. Scoop the flesh out of the skin (discard skin) and add to the bowl.
- Mix all the ingredients well to evenly combine.
- Refrigerate for 30 minutes or so.
- Remove from the fridge. Form mixture into patties (roughly 80g each), place on a lined baking tray and bake for 20-25 minutes. The patties are ready!
- Optional: heat ghee in a frying pan on medium heat. Lightly pan fry the patties (about one minute on each side) until nice and golden.
