Ingredients
- 130 grams of almond meal
- 2 tablespoons of melted coconut oil
- 30 grams of cacao nibs
- 2 tablespoons of maple syrup
- 1 tablespoon of vanilla extract
- ¼ teaspoon of sea salt flakes
- ¼ teaspoon of baking powder
Method
- Preheat oven to 170C / 340F
- Combine all ingredients in a bowl and mix to a batter
- On a lined baking tray, roll out 1 tablespoon of batter and press lightly in the centre
- Bake for 13 – 15 minutes
Note: They will be soft when removed from the oven but will firm as they cool. The cookie centres will stay soft and fudgey when cool.
Tip: If you prefer a a crunchy cookie, place back in the over for another 3 – 5 minutes.
