There are many good reasons to ditch sugar from your diet. And with many nutritionists and health experts hailing the praises of sugar-free eating, I’ve been experimenting by baking sweet treats without the nasty stuff.
These sugar-free berry muffins take just minutes to make and can be frozen for a healthy snack on the go. The batter makes around 12 muffins.
Ingredients
- 3/4 C xylitol (or another sugar substitute)
- A handful of frozen berries
- 1/2 C coconut oil
- 1 egg, lightly whisked
- 1C milk
- 2C wholemeal self-raising flour (or gluten-free substitute)
Method
- Preheat the oven to 190°C
- Mix the xylitol and flour in a large bowl
- Add berries and stir
- Add milk, egg and oil
- Stir ingredients together with a metal spoon
- Pour the batter into greased (or cased) muffin pans.
- Put pan in the oven for 20 to 30 minutes.
To check if the muffins are cooked, insert a skewer or knife into a middle of a muffin. If it comes out clean, take the pans out of the oven and allow the muffins to cool.
Simply serve the muffins with a dollop of organic butter. Keep the leftovers in an air-tight container or pop them in the freezer.
