Condiment, Gluten-free
Making your own condiments is a fantastic way of adding flavor and nutritional value without any nasty ingredients (as are found in many store bought varieties).
I love having a jar of this dressing on hand throughout the week, ready to give fresh or steamed veggies a lift! It’s also delicious drizzled over poached eggs.
Ingredients
- 70g freshly picked basil leaves
- A scant ½ teaspoon fine sea salt
- ¼ cup pine nuts
- ¼ cup grated pecorino or Parmesan cheese
- 1/3 cup extra virgin olive oil
- ¼ cup natural yoghurt (sheep’s or cow’s)
Method
- Place all ingredients in a mini food processor and process until smooth.
- Store in a glass jar in the fridge for up to 4 days.
