Peanut Butter Fudge


Raw desserts are often more nutritious, and can be more delicious than traditional desserts so sit back and give this peanut butter fudge a go.  Because raw desserts happen to be quite delicious, you will not need to sacrifice on taste.  You can sit back and reap all the nutritional rewards as well!

The following recipe is an excerpt from The Dozy Baker1 and is a definite winner!

Ingredients


  • 1 Cup smooth peanut butter
  • 1 Cup coconut oil
  • 1/2 Cup Maple syrup
  • pinch of salt

Method


I used a 28cm by 18cm tin, the exact size doesn’t really matter you will just end up with a thicker or thinner fudge. Line it with cling film, which makes it so much easier when removing the fudge for slicing.

Next melt the coconut oil on a very low heat and leave to cool.

Measure out the peanut butter, maple syrup, cooled coconut oil and salt into a bowl and mix until combined. Pour into the lined tin and put in the freezer for 30 minutes.

Slice and keep in an air tight container in the fridge.

You could also add a Cacao Topping..

TOPPING


  • 1/2 Cup Coconut oil
  • 4 Tbsp Maple syrup
  • 5 Tbsp Cacao

Melt 1/2 Cup coconut oil on a low heat. Measure out the maple syrup and Cacao into a bowl, then add the cooled coconut oil, mix together.

After the fudge has been in the freezer for 20 minutes take it out and spread on the Cacao mixture. Put back in the freezer for a further 10 minutes Originally published on Feb 24, 2017
