Ingredients
- 2½ cups fresh strawberries
- 1 tablespoon water
- 1 tablespoon fresh lemon juice
- 2 teaspoons arrowroot powder
Instructions
Place the strawberries, water, lemon juice and arrowroot powder in the saucepan and heat for 5 minutes to soften. Place the mixture in a blender and puree. Return to the stove. Cut open the vanilla pod and scoop out the seeds. Place with the vanilla seeds and pods in the pot and bring to the boil over a medium heat, continually stirring.
Lower the heat and simmer for about 50 minutes or until thickened. You will know when it is done when you draw a line through the middle and the hole stays open for a few seconds. When this happens, take off the heat and remove pod. Cool it before storing.
