Lemon and Blueberry Muffin Recipe

Recipes With a tang of lemon, this deliciously nutritious muffin recipe will satisfy your sweet tooth as well as giving you a boost of nutrition

Ingredients


  • 2 cups rice flour
  • 3 teaspoons baking powder
  • 1 tsp vanilla
  • 1/2 cup caster sugar
  • 125 g butter melted and slightly cooled
  • 1/4 cup milk
  • 2 certified free range eggs
  • 1 mashed banana
  • 125g frozen blueberries
  • zest of 1 lemon

Preheat the oven to 180 degress C and line a 12 cup muffin pan.  Sift the flour into a large bowl and stir in the sugar. In a separate large bowl, whisk together the butter, milk, eggs, banana, bleberries, lemon zest and vanilla.  Make a well in the centre of the dry ingredients and add the liquid ingredients all at once.  Stir in until just combined, making sure not to over mix. 

Spoon into the pre prepared muffin cases and bake for 15-20 minutes until just golden brown.  Cool in pan for a few minutes and then transefer to a wire rack.
