Ingredients:
- 4-5 large kale leaves with their stems removed and leaves chopped
- 3 oranges cut into bits
- ¼ cup slivered almonds, toasted
For the Dressing:
- ¼ cup freshly squeezed orange juice
- 2 teaspoons Dijon mustard
- 1 tsp honey
- ¼ tsp Himalayan salt
- ¼ tsp pepper
- 3 Tbs olive oil
Massage the kale in warm water for about 2 minutes to soften the leaves. Combine the kale, cut up orange pieces and toasted almonds in your bowl and toss. For the dressing, in a separate bowl, whisk together the orange juice, mustard, honey, salt and pepper. Once completely combined, pour over the salad and toss gently.
