Caesar salad is often frowned upon due to its notoriously unhealthy dressing. This healthy Caesar salad recipe is bursting with protein and healthy fats
Ingredients
For the chicken
- 1 ½ tablespoons lemon juice
- 1 tbsp extra virgin olive oil
- 2 tsp fresh thyme leaves
- 1 crushed garlic clove
- 4 organic or certified free range chicken breast fillets
For the croutons
- 1 thick slice wholemeal bread
- Olive oil
For the salad and dressing
- 1 clove chopped garlic
- 1 tsp Dijon mustard
- ½ tsp Worcestershire sauce (you can purchase an organic sauce that will not contain unhealthy additives
- 1 tbs lemon juice
- 4 anchovy fillets (optional)
- 3 tbsp mayonnaide
- 4 tbsp plain yoghurt
- 1 head romain or cos lettuce
- Rocket leaves
- Half a block of parmesan cheese
Instructions
- Combine the lemon juice, oil, thyme and garlic in a shallow dish and add in the chicken making sure it is well covered with the marinade. Leave the chicken in the fridge for 2 hours.
- Cube the bread and then fry in a bit of olive oil until golden and crisp.
- Blend the garlic, mustard, Worcestershire sauce, lemon juice and anchovies if you are using until smooth. Add the mayonnaise and yoghurt and blend again.
- Heat a griddle pan and cook the chicken until cooked through – about 10-15 mins. Once cooked, remove and set aside for 5 minutes and then slice.
