Bread and butter pudding is the ultimate childhood comfort food, but unfortunately is not always healthy. Puddings don't get more indulgent than the British bread and butter pudding. It is the ultimate childhood comfort food, but unfortunately is not always healthy, to say the least. Oozing with sugar and butter, they are a real treat food. This recipe, however can offer you less fat and less sugar.
Ingredients
- 2 cups cream
- 1 1/2 cups milk
- 1/4 cup honey
- 4 eggs
- 8 slices spelt or wholemeal bread
- 2 medium bananas
- Greek yoghurt to serve
- 1 cinnamon stick
- 1 vanilla bean or 2 tsp vanilla essence
- 1 tbs brown sugar
Instructions
- Preheat the oven to 180 degrees Celsius and lightly grease a casserole dish.
- In a medium saucepan combine the cream, milk, honey and cinnamon.
- Split the vanilla bean in half and scoop out the seeds with the back of a teaspoon. Stir over medium heat for 5-7 minutes until mixture is hot. Pour into a jug and let cool.
- In a large bowl, whisk the eggs until light and frothy and then gradually whisk in the warm milk mixture.
- Layer the bread slices and bananas alternately in the dish, slightly overlapping. Slowly pour the liquid mixture over the bread and banana until covered and sprinkle with sugar.
- Place in a larger baking dish and add just enough boiled water to come halfway up the sides of the dish.
- Bake for 40-45 minutes or until pudding is set.
- Let cool a bit and serve.
