There is something really good about an aromatically enticing plate of grilled veggie fajitas. The taste, the smell and the simplicity of veggie fajitas makes them perfect for all occasions. Fajitas allow for diverse choices or combinations, so the chef in each one of us can be expressive with our own style of fajitas. Here is a simple recipe for grilled veggie fajitas to get you started
Ingredients
- Tortillas – there are so many choices available
- Zucchini
- Mushrooms
- Onions of your choice
- Capsicum – green and red for colour
- Chili pepper
- Spinach
- Avocado
- Lime
- Cumin
- White pepper
- Garlic
- Paprika
- Fresh coriander
- Worcestershire or soy sauce
Instructions
The simplicity of fajitas lets you cook for one, two or ten people at the same time. When it comes to proportions for this recipe, just use your gut. It is always ok to make a little extra.
- Cut all of your vegetable large enough to fit on the grill without falling through the bars. You can also cut them in chunks and skewer them.
- Once you have cut the veggies, place them in a large mixing bowl. Exclude the avocado and spinach, as they will show up later.
- Season the contents with adequate cumin, white pepper, coriander, paprika, diced garlic and Worcester (sub. soy sauce). Mix them thoroughly until they are evenly coated.
- Grill them on a medium heat until the have softened a bit. Try to never overcook your veggies. You want to keep as many nutrients in them as possible. This will also help you reduce the amount of charcoal you are ingesting.
- Dice the avocado, and place it in the mixing bowl. Toss the spinach in the bowl as well.
- When the veggies are cooked, put them back in the mixing bowl. Squeeze some fresh lime over everything and toss it all together.
- Once it seems well mixed, place them in the tortillas that you have been warming in some aluminium foil on the other side of the grill. Roll the tortilla shut, tucking in the bottom and closing one end as you roll.
- Take a big bite and enjoy.
Not only are great veggie fajitas easy to make, they are quick and relatively inexpensive. Play with the spice mixtures, using fresh herbs when you can. Put together your favorite combinations of vegetables. If the urge really hits you, throw a few grilled shrimp in the mix. They would not be veggie fajitas then, but they sure would be good!!
