This citrus chicken recipe is refreshing and tasty with the slightest hint of lemon and orange.
Ingredients
Serves 4
- 1 whole chicken cut into 8 pieces
- Olive oil
- Himalayan salt
- Freshly ground pepper
- 2 lemons, halved
- 2 oranges, halved
Instructions
- Put the chicken pieces in an oiled casserole dish and rub olive oil over the pieces.
Squeeze over the lemon and orange juice from 1 half of the fruits and season with salt and pepper.
Bake on 180 degrees for about an hour or until cooked through. - With the remaining citrus halves, brush over the chicken pieces with a sprinkle of oil and bake again for another 5-10 minutes.
- Serve with grilled lemon and orange halves alongside the chicken for squeezing over.
This dish goes beautifully with rice or roast potato and a green salad, making it highly nutritious and filling!
