This Green Leaf Pomegranate Salad Recipe is delicious as a side. It is high in fibre so is great for keeping your digestive system healthy.
Ingredients
- 3/4 cup unsweetened pomegranate juice
- 1 tablespoon fresh lemon juice
- 2 extra-virgin olive oil
- 1/2 himalayan salt
- 1/4 teaspoon minced fresh thyme leaves
- 1/8 teaspoon freshly ground black pepper
- 1-2 pre packed baby spinach
- 3/4 cup finely sliced radish heads
- 1/2 cup pomegranate seeds
- 1/2 cup coarsely chopped toasted hazelnuts (place in a moderate oven for a few minutes or until toasted)
- 1 large firm-ripe pear sliced into julienne slivers
Instructions
- In a small saucepan, boil the pomegranate juice until reduced to 1/4 cup, this should take about 5-6 minutes. Take off the heat and let cool.
- Once the reduced juice is coil, whisk in the lemon juice, oil, salt, thyme and pepper.
- In a salad bowl, combine the spinach, sliced radishes, pomegranate seeds and hazelnuts, pour over the dressing and arrange the pear on the salad.
- Sit back and enjoy!
