After last week's awesome recipes for healthy salad dressing, here is now an equally awesome recipe for a garden salad. But not your usual boring salad, because this one involves a colourful presentation that will turn your simple, boring salad into a touch of delicious art.
Ingredients
- 1/2 cup chopped cauliflower
- 1/4 cup shredded carrots
- 1/2 cup sliced radishes
- 1/2 cup sliced mushrooms
- 1/2 cup chickpeas cooked
- 1/4 cup grape tomatoes
- 1 cup spinach
- 1/4 cup raisins
- 2 tablespoons balsamic vinegar
- 2 tablespoons olive oil
- Splash of lemon juice
Instructions
- Whisk together the balsamic vinegar, olive oil and lemon juice and pour into the bottom of the bowl.
- Add the remainder of the ingredients in layers started from the top of the list to the bottom. Enjoy.
