Crispy salmon Recipe
Ingredients
- 2 bunches asparagus, trimmed, halved
- 3 zucchini, trimmed, peeled into ribbons
- 1/2 cup fresh mint leaves
- 4 salmon fillets
- 1 1/2 tbs tamari
- 1 1/2 tbs mirin
- 1 tsp finely grated fresh ginger
- 1/2 tsp sesame oil
Instructions
- Steam the asparagus until just tender and drain. Pour cold, running water over. Place the asparagus, zucchini and mint in a large bowl and toss to combine. Divide your salad among 4 serving plates.
- Place a non-stick fry pan over medium heat and sprinkle with a little olive oil. Cook salmon with the skin side down for 2-3 minutes or until crisp. Turn over and cook for another 2-3 minutes or until cooked to your liking.
- To make the dressing, combine the liquid ingredients in a small bowl.
- Place the cooked salmon over the salad and drizzle with the dressing.
