Crispy salmon Recipe

Ingredients

  • 2 bunches asparagus, trimmed, halved
  • 3 zucchini, trimmed, peeled into ribbons
  • 1/2 cup fresh mint leaves
  • 4 salmon fillets
  • 1 1/2 tbs tamari
  • 1 1/2 tbs mirin
  • 1 tsp finely grated fresh ginger
  • 1/2 tsp sesame oil

Instructions

  1. Steam the asparagus until just tender and drain.  Pour cold, running water over. Place the asparagus, zucchini and mint in a large bowl and toss to combine. Divide your salad among 4 serving plates.
  2. Place a non-stick fry pan over medium heat and sprinkle with a little olive oil.  Cook salmon with the skin side down for 2-3 minutes or until crisp.  Turn over and cook for another 2-3 minutes or until cooked to your liking.
  3. To make the dressing, combine the liquid ingredients in a small bowl.
  4. Place the cooked salmon over the salad and drizzle with the dressing.
  5. Enjoy!
