Feeding kids can be a bit of a challenge. But with these lunch ideas that you can make yourself for them, you don't have to worry about giving your kids junk food. At the same time, ensuring that they still enjoy eating healthy.
Chicken Nuggets
Feeding your toddlers can often turn a pleasant job into a nightmare, "I just want those chicken nuggets from McDonald's Mum!" they yell. So one night we made our own homemade chicken nuggests, and they were a hit! No more worries of feeding your kids with chemicals, plus you're sure that they are always fresh and never frozen.
Ingredients
- 2 chicken breast fillets
- ½ cup Bread crumbs
- ½ cup Flour
- 1 Egg
- Salt and pepper
Instructions
- Preheat the oven to 180 degrees celcius.
- Cut breast fillets into bite sized chunks.
- Whisk the egg in bowl and add a little water, whisk again until fluffy.
- Pour flour and breadcrumbs into a separate bowls. Make your own homemade breadcrumbs for that added twist, its worth it.
- Dip the chicken chunks one at a time into the flour, then into the whisked egg and lastly into the breadcrumbs. Place onto an oiled baking tray. Repeat this process until all the chicken is coated and place on the baking tray.
- Sprinkle with a little olive oil and place in the oven for about 20 minutes or until golden brown and cooked through. Place the chicken nuggets on a little plate served with tomato sauce for dipping.
French Toast Finger Sandwiches
Another favorites among kids that they will surely enjoy. And I bet, they will appreciate it more because you made it for them.
Ingredients
- 8 slices soft wholemeal bread
- 6 tbsp raspberry or apricot jam
- 4 large eggs
- 3/4 cup milk
- 1 tsp grated lemon rind
- pinch of salt
- 1 tbsp butter, plus more as needed
To serve
- maple syrup
- cinnamon (optional)
Instructions
- Spread jam right to the edges of a slice of bread and then make into a sandwich using the other slice of bread. Cut each sandwich into 3 strips.
- Beat together the eggs, milk, lemon rind and a pinch of salt. Dip each sandwich strip into the egg mixture to coat.
- Melt 1 tbsp of butter in a large non-stick frying pan over medium heat. Working in batches, and adding more butter as needed, fry strips for 2 min per side or until golden.
- Serve with a sprinkle of maple syrup and dust over the cinnamon in using.
