Breakfast Date Muffins are great to have warm your house up when the wind outside is cold, simple to make and great snack to have in between meals. Reminds me of when I was young at my Nan's house, so brings back warm memories.
Ingredients
- 1 cup unprocessed bran
- 1/2 cup flaxseed meal
- 1 1/2 cups wholemeal self raising flour
- 1 teaspoon mixed spice
- 1 1/2 cups chopped pitted dates
- 1/4 cup brown sugar
- 1 egg, lightly beaten
- 3 tablespoons oil (coconut or olive)
- 1/3 cup maple syrup
- 1 1/2 cups milk (dairy, soy or almond)
Instructions
- Place unprocessed bran, flaxseed meal, flour, spice, dates and sugar into a large bowl.
- Combine egg, oil, maple syrup and milk in a separate bowl.
- Pour liquid ingredients into dry ingredients, then mix gently until just combined.
- Spoon mixture into lightly greased muffin tins. Bake in a moderately hot oven for 20 minutes. Serve warm.
Where possible, try using organic ingredients to ensure complete chemical free muffins.
