Banana chocolate chip bread is both decadent and delicious.  This recipe thanks to Jamie Oliver is one of the best and most simple to make.

Banana bread seems to be taking over the world in terms of staple snacking and baking repertoire. The banana bread craze makes a lot of sense when you consider that bananas are the world’s most popular and cultivated fruit.  The other reason may be due to finding a solution to the problem of what to do when the bananas become over ripe, squishy and brown.  When it comes to baking, the answer is easy – banana bread where the browner the banana, the better. 

There are many varying kinds of banana bread. Some recipe call for oil which will give a lighter texture, other recipes favour melted butter for its richness. There are some recipes that include walnuts and raisins, while others stick to the purity of banana by itself. This recipe includes chocolate chip recipes for that added decadence and richness.

Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup sugar
  • 3 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup chocolate chips (finely chopped)
  • 1 egg (beaten)
  • 3/4 cup milk
  • 1/4 cup vegetable oil
  • 2 cups mashed ripe bananas

Instructions

  1. Sift together all dry ingredients.
  2. Combine liquid ingredients, including melted fat or vegetable oil.
  3. Add liquids to dry ingredients and mix just until all flour is moistened (approx 10 seconds). The batter will look lumpy. Do not over mix.
  4. Pour batter in loaf pan and bake immediately. Bake at 350 degrees F for 65-70 minutes or until a toothpick inserted into the centre of the cake comes out clean.
  5. Serve with a good cup of steeped tea or a glass of cold fresh cow's milk.
